Kalua Pig
- 3-5 pounds of boneless pork butt (washed and patted dry)
- ¾ teaspoon of liquid smoke
- ½ teaspoon of course salt
- ¼ teaspoon ground pepper
- 1 Banana leaf (optional- you can find this in the frozen section of an oriental store)
- Rub liquid smoke all over the meat, then the course salt and ground pepper.
- Wrap the banana leaf around the meat and then wrap foil tightly around the meat and banana leaf to form a football.
- Bake in a baking dish for 2-3 hours at 350 degrees until tender.
- Let stand and shred the meat in its juices, then serve over rice.
This entree serves 12-15 generous portions.
